Preparation procedure

  • Preparing the dough: Roll out the puff pastry to the size of the baking sheet (approx. 40 × 29 cm) and transfer it to a lightly greased baking sheet with a higher edge. Shape the dough so that the edges rise at least 1–2 cm up the sides – this will create a "tray" for the filling.
  • Quark filling: In a bowl whisk the quark, egg yolks, milk, pudding mixes, oil and sugar to taste. The mixture will be thinner – that's okay. Pour it evenly onto the prepared dough. Place in a preheated oven and bake at 200 °C for about 20–25 minutes, until the edges of the dough begin to brown.
  • Egg white meringue: Meanwhile whip the egg whites with a pinch of salt into stiff peaks. Gradually add the powdered sugar and whip until the mixture is smooth, firm and glossy.
  • Baking: Remove the baked cake from the oven, carefully spread the egg white meringue and return it to the oven. Reduce the temperature to approx. 150–160 °C and bake for another 10–15 minutes, until the meringue gains a light golden color.
  • Cooling and serving: After baking let the cake cool completely. It tastes best well chilled, ideally after several hours in the refrigerator. Cut only after it has fully set.
