A moist sponge, lemon-scented quark cream and simple layering that anyone can manage. These quark squares are ideal for the Sunday table and family celebrations – the slices hold their shape, the cream is pleasantly dense and the dessert cuts into portions beautifully. The recipe is based on a popular homemade version with pudding for extra firmness of the cream.

Preparation procedure

  • Sponge cake layers Whip the egg whites with a pinch of salt to stiff peaks. Gradually beat in the sugar, then add the yolks one at a time. Mix the flour with the baking powder and gently fold it in. Divide the batter into two halves and spread onto two baking trays lined with parchment paper (or bake in batches). Bake at 180 °C for about 25–30 minutes until golden. Let the layers cool and peel off the paper.
  • Thick quark cream From the milk and pudding powder, cook a thick pudding, cover with plastic wrap so it touches the surface and let cool to room temperature. Beat the butter with the powdered sugar and vanilla sugar, add the lemon zest and juice and beat until fluffy. Fold in the cooled pudding and finally the quark. Whip into a smooth, firm cream.
  • Layering and chilling Place the first sponge layer on a board, spread the quark cream evenly and top with the second layer. Lightly weight (e.g., with a cutting board), put in the fridge for 2–3 hours to set. Before serving, dust with powdered sugar.

Servírování a tipy

  • Pro slavnostní vzhled přidejte na povrch čokoládové hobliny, případně lehký čokoládový „mráček“ přes jemné sítko.

  • Citronovou šťávu dávkujte podle chuti – krém má být svěží, ale vyvážený.

  • Pokud pečete jen na jednom plechu, pláty upečte postupně; celkový čas pečení se prodlouží.
