Batter:

1.5 cups plain yogurt (a cup with a volume of 150 ml)
1 cup plain flour (250 ml)
3/4 cup sugar
1/2 packet baking powder
2 tablespoons oil

Fruit:

500–600 g fresh or canned fruit (e.g. apricots, blueberries, plums, strawberries)

Crumb topping:

3 tablespoons plain flour
2 tablespoons sugar
2 tablespoons butter

Preparation procedure

Preparing the batter In a bowl mix the plain yogurt, sugar, oil and baking powder. Gradually add the plain flour until a thicker batter forms that should be spread onto the baking tray with a spatula. Spread the batter into a round pan lined with baking paper.
Fruit Arrange two layers of fruit on the batter – an ideal combination is a soft and a firmer type, for example plums and blueberries. You can use either fresh or canned fruit (well drained).
Crumb topping Work the flour, sugar and butter into a crumb mixture and sprinkle it evenly over the whole cake.
Baking Place the cake into a preheated oven and bake at 180 °C (convection oven) for approximately 30 minutes, until the crumb topping is golden and the batter is cooked through. You can check doneness with a skewer.
