This excellent and refreshing summer cake is full of light cream and delicate cake. However, you can also prepare it in a no-bake version, where you use ordinary ladyfingers or butter biscuits instead of the cake. This dessert is great for summer days and will certainly impress your guests!

Preparation procedure
- Preparing the dough: Beat the softened butter with the granulated and vanilla sugar. Gradually add the eggs, one at a time, and beat thoroughly. Stir in the sifted flour, baking powder and a pinch of salt. Create a uniform batter. Grease a 26 cm diameter pan with butter and dust with flour. Spread the batter evenly in the pan. Bake in a preheated oven at 180 °C for 20–25 minutes, until the batter is golden. After baking, let it cool in the pan for about 10 minutes and then remove it from the pan.
- Preparing the cream: Whip the curd together with the whipping cream. Sweeten to taste with powdered sugar. If the cream is too thick, you can add 1–2 tablespoons of plain yogurt. Prepare the gelatin stabilizer according to the instructions on the package and stir it into the cream.
- Assembling the cake: If you’re making the no-bake version, arrange ladyfingers or butter biscuits on the bottom of the pan and drizzle them with fruit juice or milk. On the baked or biscuit base, arrange the sliced peaches or apricots. Spread the cream evenly over the fruit. You can grease the pan beforehand so the cream doesn’t stick to its sides. Place the cake in the refrigerator and let it chill for at least 2 hours.
