Delicate, fluffy crescent rolls with a hint of sour cream are a perfect treat with tea or coffee. They are crispy and filled with the best filling, which you can customize to your own taste. Preparation procedure

  • Dough preparation: Pour the flour into a bowl and add the chilled butter cut into pieces. Work the butter into the flour with your hands until a crumbly mixture forms. Add the baking soda and sour cream to this mixture and gradually add flour until the dough has a consistency similar to ravioli dough. Shape the dough into a ball and let it rest in the refrigerator for 30 minutes.
  • Preparing the poppy seed filling: Grind the poppy seeds and pour over a little hot water. Let them soak for 10 minutes. Then gradually add sugar to taste and mix thoroughly.
  • Preparing the walnut filling: Mix the ground walnuts with sugar. You can crush the nuts on a board with a rolling pin so they release more oil, which will enrich the filling with a stronger flavor.
  • Shaping and filling the crescents: After chilling, roll the dough out to about 1 mm thickness. Cut it into triangles, similar to when making croissants. Fill each triangle with the prepared filling (poppy seeds or walnuts) and roll them into crescent shapes.
  • Baking: Bake the crescents in an oven preheated to 180 °C for approximately 15 minutes. Watch them to avoid overbaking and drying out.
  • Finishing: Let the finished crescents cool slightly and then sprinkle them with powdered sugar.
  • Besides poppy seed and walnut filling you can try other variants, such as fruit jams, marmalades, chopped dried fruit or ground cinnamon with quark.
  • Crescents are ideal for a quick treat, because thanks to their delicious taste and crunchy texture they disappear from the table very quickly!
