Don’t have the patience to wait for classic canned pickles? Try this quick recipe for „quick pickles“ that are ready in just 3–4 hours. They make a great accompaniment to dinner, grilled meat or serve as a healthy nibble.

  • Preparing the cucumbers Thoroughly wash the cucumbers, cut off both ends and halve them lengthwise (smaller cucumbers you can just halve). Place them into the resealable bag.
  • Adding herbs and garlic Press the garlic or grate it finely. Chop the dill finely. Add both ingredients to the cucumbers.
  • Seasoning mix In a small bowl mix the salt, sugar, ground coriander, pepper, oil and vinegar. Pour the resulting dressing into the bag with the cucumbers.
  • Shaking and resting Close the bag tightly and shake thoroughly so the seasoning mixture is evenly distributed. Leave to sit on the kitchen counter for 3–4 hours.
  • Storage and further storage After marinating put the cucumbers into the fridge – they taste even fuller and will keep for another 2–3 days.
