Žemlovka is one of the traditional sweet dishes that has become established in Czech and Slovak cuisine decades ago. This recipe proves that even ordinary rolls that are no longer fresh can be transformed into an irresistible dessert. The combination of poppy seeds, cherries, smooth pudding and fluffy whipped cream creates a dessert that is filling, juicy and yet very simple to prepare. If you don’t have poppy seeds on hand, you can replace them with coconut – the result will be just as excellent.

Preparation procedure

  • Slice the rolls into thin rounds and set aside.
  • In a saucepan, heat the milk with the butter, remove from the heat and stir in the sugar, poppy seeds, lemon zest and yolks.
  • Pour this mixture over the rolls, mix and add some of the cherries. Mix everything well.
  • Grease a round baking pan with butter and transfer the poppy mixture into it. Smooth it well and sprinkle the remaining cherries on the surface.
  • Bake in a preheated oven at 180 °C for about 15–20 minutes. Then let cool.
  • Meanwhile, cook a thick pudding from the milk and pudding powder. Let it cool slightly and pour it over the baked base. Level and let cool again.
  • Finally, whip the cream until stiff and spread it over the pudding layer. Sprinkle the surface with a little ground poppy seed.
