Preparation procedure

  • Preparing the base Preheat the oven to 170 °C. Grease a baking sheet with butter and dust with coarse flour. Whisk the egg whites and sugar into stiff peaks. In a bowl, mix the flour with the coconut flakes. Gently fold the coconut mixture into the egg whites so it stays airy. Spread the batter evenly on the prepared sheet and bake for 20 minutes, until the edges begin to lightly brown.
  • Preparing the cream In a bowl, whisk the egg yolks with half of the milk. Add the pudding powder and mix until smooth. Bring the remaining milk with the sugar to a boil, remove from the heat and, stirring constantly, pour in the egg mixture. Cook the cream until it thickens. Let it cool. Whip the butter until fluffy and gradually beat in the cooled pudding.
  • Assembly and decoration Let the baked base cool briefly. Spread the cream over it and smooth the surface. Generously sprinkle with coarsely grated coconut. Let the dessert set in the refrigerator for at least 4 hours (ideally overnight).
