This quark cake is light, fluffy and very tasty. If you like to experiment, you can add fruit, raisins or nuts to improve it even more. It’s a great dessert that you’ll fall in love with at first taste!

Preparation procedure
- Preparing the oven: Preheat the oven to 180 °C and grease the baking tray with butter.
- Preparing the batter: Mix the quark with the sour cream, add the softened butter, eggs, flour, sugar and lemon zest. Mix everything thoroughly until you have a uniform batter.
- Baking: Pour the batter onto a baking sheet with higher edges. Gently tap the tray several times on the kitchen counter to remove air bubbles. Bake in the preheated oven at 180 °C for 25–30 minutes, until the cake is nicely risen and golden. After removing from the oven the cake will sink slightly, which is completely normal and does not affect the taste.
- Finishing: After baking you can spread apricot jam over the cake and dust it with powdered sugar, but it's great on its own too.
