This walnut pastry is ideal for any occasion – whether guests drop by or you fancy something sweet with your coffee. The combination of a crisp walnut base and a creamy filling is simply irresistible.

Preparation procedure

  • Preparing the dough: Beat the egg whites to stiff peaks. Gradually add the sugar and mix until the whites are stiff. Fold in the ground walnuts and the chopped walnuts. Spread the mixture onto a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C for about 20 minutes. Let cool.
  • Preparing the cream: Whisk the egg yolks with the sugar over a bain-marie for about 10 minutes, until the mixture thickens and becomes creamy. Add the flour and continue whisking until everything is well combined. Let the mixture cool. Stir the grated lemon zest into the cooled cream, then gradually incorporate the whipped butter by teaspoons. Spread the cream over the cooled walnut dough and smooth the surface.
  • Finishing: Sprinkle with walnuts and let the cake cool. After cooling, you can serve.
