Preparation procedure

  • Pour the all-purpose flour into a deep bowl, add the baking powder, a pinch of salt and the vanilla sugar. Thoroughly mix everything with a whisk.
  • Add the softened butter and work the mixture with your hands into a crumbly dough.
  • Pour the sour cream into the dough and add the yolk. Mix everything with a spatula and knead a smooth dough by hand.
  • Wrap the dough in a food storage bag and place it in the refrigerator for 10–15 minutes.
  • Meanwhile prepare the filling: In a bowl add the egg white, sugar and vanilla sugar. Whip with a mixer into a fluffy cream.
  • Add the chopped walnuts and mix everything with a spatula.
  • After the time has passed, take the dough out of the refrigerator and transfer it to a floured surface. Divide it into four equal parts.
  • Roll each portion with a rolling pin into the shape of a larger circle. Using a fluted pastry cutter, divide the dough into 8 pieces.
  • Spread the nut filling on the edge of each piece. Fold the wider part of the dough over and roll up, forming small rolls.
  • Place the rolls on a baking sheet lined with parchment paper. Put them into a preheated oven at 180 °C.
  • Bake for 15–20 minutes until golden.
  • After baking, remove the rolls from the oven and coat them in powdered sugar.
