If you don’t know what to do with stale bread, this Hungarian recipe for bread dumplings will save you. They are so great that they can be eaten on their own, and when you add bacon or cracklings to them, they become a real delicacy. You can even freeze them and always have a great side dish on hand.

Preparation procedure
- Preparing the bread: Tear the stale bread into smaller pieces and place them in a large bowl. Pour warm milk over it. Adjust the amount of milk according to the dryness of the bread – it should be moist but not soggy. Stir lightly, cover, and let rest for 30 minutes.
- Processing the dough: Knead the bread thoroughly by hand until a dense mass forms. Add the eggs, parsley, salt, pepper and optional ingredients (e.g., fried bacon, onion or cracklings). Mix until the dough is uniform. If the dough seems too thin, add 1–2 tablespoons of semolina to make it firmer and the dumplings fluffier.
- Shaping and cooking the dumplings: With hands moistened in water, shape small balls from the dough. Place them into boiling salted water and cook for about 20 minutes. During cooking, occasionally stir the dumplings so they don't stick to the bottom of the pot.
- Serving: Remove the cooked dumplings, let drain, and serve hot. They taste great on their own, but also work well as a side dish to sauces or meat.
