Yeasted kolaches are one of the most popular sweet treats you can make at home. This recipe for 30 kolaches guarantees they will be soft and moist not only on the day they’re baked but for several days afterward. With various fillings and a generous streusel topping, they make perfect refreshments for a family gathering or an afternoon coffee.

Preparation procedure
- For the dough (approx. 30 kolaches with a diameter of 9-10 cm): 500 g all-purpose flour 250 ml milk 20 g yeast 100 g granulated sugar 4 egg yolks A pinch of salt Zest of 1 lemon or lemon oil 200 ml vegetable oil Curd cheese filling: 250 g full-fat quark (block) 1 egg yolk 3-4 tablespoons granulated sugar Zest of 1 lemon or lemon oil Plum filling: A jar of plum preserves (approx. 300 g) Grated gingerbread for thickening Cinnamon, rum Apple filling: A jar of thick apple preserves (approx. 350-400 g) Or coarsely grated apples flavored with cinnamon and ground cloves Streusel: 150 g semi-coarse flour 100 g granulated sugar 100 g butter To finish: 1 beaten egg (for brushing) Raisins soaked in rum, walnuts, almonds (for decorating) 70 g melted butter + rum for drizzling over the hot kolaches
- 2. Preparation of the fillings: Curd cheese filling: Mix all ingredients and sweeten to taste. Plum filling: Warm the povidla, flavor with cinnamon and rum, and thicken with grated gingerbread if needed. Streusel: Mix the flour with the sugar and add the butter cut into pieces. Use your hands to form the streusel.
- 3. Shaping the kolaches: Divide the risen dough into 30 balls and let them proof on the baking sheet for a while. Use a glass with a flat bottom to make a depression in each ball. Brush the edges with egg.
- 4. Filling and baking: Fill the kolaches with the quark, plum, or apple filling. Decorate with raisins, walnuts, or almonds and sprinkle with streusel. Bake in an oven preheated to 190 °C for about 15 minutes.
- 5. Finishing: After baking, drizzle the kolaches with melted butter mixed with rum. Let cool on a wire rack.
