Preparation procedure

  • Dough preparation: Mix the flour, sugar, baking soda, gingerbread spice and cocoa well. Add the milk, oil, plum jam and honey, mix everything well until a smooth batter forms.
  • Baking: Pour half of the batter onto a baking sheet lined with parchment paper and spread it evenly. Bake in a preheated oven at 170 °C for about 10–15 minutes, until a crust forms on the surface.
  • Preparing the filling: Grate the dark chocolate and prepare the plum jam.
  • Continuing baking: Once the batter firms up and forms a crust, remove the baking sheet from the oven. Spread plum jam over the baked sheet and sprinkle with the grated chocolate. Pour the remaining batter on top and carefully spread it. Return the sheet to the oven and bake for another 20 minutes. Test with a toothpick to see if the cake is done.
  • Preparing the chocolate glaze: In a bain-marie (double boiler) melt the chocolate, margarine and oil until a glossy glaze forms. Let the cake cool a little, then pour the chocolate glaze over it and let it set.
