Homemade elderflower syrup is one of the most traditional natural beverages, retaining popularity across generations. Our grandmothers prepared it every year not only for its delicious taste but also for its medicinal effects. Elderflowers picked in sunny weather contain valuable substances that support the immune system, loosen the airways and cleanse the body. This recipe is simple, unboiled, and the resulting syrup can be stored for up to 12 months.

Preparation procedure

  • Preparing the infusion Pour 3 liters of water into a large container and dissolve the citric acid in it. Add the elderflowers – they must not be washed, only cleaned of dirt – and the lemons sliced into rounds.
  • Steeping Stir well, cover with a clean cloth and let stand for 24 hours in a cool, dark place.
  • Sweetening The next day strain the mixture through a fine sieve or cloth. Add the sugar to the strained liquid and stir until completely dissolved. Let stand for another 24 hours, stirring occasionally.
  • Bottling and storage After 48 hours the syrup is ready for filling. Pour it into clean, dry glass bottles and seal well. Store in a dark, cool place – ideally in a cellar or pantry. Stored this way it will keep for up to one year.

Total preparation time: 48 hours

Volume: approx. 4–5 liters of syrup (depending on the size of the flowers and the juiciness of the lemons)
