Stale rolls don’t have to end up in the bin! Try this simple recipe for homemade pirozhki, which you can fill with sweet or savory fillings. An ideal treat for the whole family.

  • Dough preparation: Cut the rolls into slices and put them into a bowl. Pour milk over them so they are soaked but not floating. Let rest for 15 minutes so the rolls soften. Gradually add flour and a pinch of salt to the mixture. First work the flour in with your hands and then gradually add more until a smooth dough that does not stick is formed.
  • Shaping the pirozhki: Transfer the dough to the work surface and roll it out into a thin sheet. Use a glass or cutter to cut out circles. Place a teaspoon of the chosen filling on each circle and fold into the shape of a pirozhok. Press the edges well so the filling doesn't leak.
  • Cooking: Place the pirozhki into a pot of boiling salted water. Cook them until they float to the surface, which takes about 3–5 minutes.
  • Serving: You can serve the cooked pirozhki sweet with melted butter, sugar, and poppy seeds, or savory depending on the filling.

Tip: If you like stronger flavors, try flavoring the dough with a little vanilla sugar (for sweet pirozhki) or spices (for savory versions). This recipe is an ideal way to use up old baked goods and prepare a quick and tasty meal.
