Preparation procedure

  • Preparing the dough: Pour the water into a pot, add the sugar, salt and margarine. Bring to a boil. Once the mixture starts to boil, steadily add the flour while stirring and cook until a thick paste forms that begins to pull away from the sides of the pot. Let cool. Beat the eggs and gradually beat them into the cooled paste. Transfer the resulting smooth dough into a piping bag and shape the donuts onto a baking sheet lined with baking paper. Leave spaces between them, the dough will expand during baking.
  • Baking: Bake in a preheated oven at 200 °C for 20 minutes, then reduce the temperature to 180 °C and bake for another 15–20 minutes. Do not open the oven during baking so the dough doesn't fall. After baking, let the donuts cool and cut them in half.
  • Cream: Mix the yolks and Gustin in a little cold milk. Bring the remaining milk to a boil with the sugar and vanilla sugar. Once it starts to boil, pour in the yolk mixture and stir until it thickens. Let cool. In the meantime whip the margarine until fluffy and fold it into the cold pudding. Whisk the cream well.
  • Whipped cream and finishing: Whip the cream until stiff. Spread cream on the bottom half of each donut, top with whipped cream and cover with the top half of the donut. Dust with powdered sugar and serve.

10 minutes dough + 40 minutes baking + 30 minutes cream and assembly

Total: approx. 1 hour 20 minutes
