Preparation procedure

  • Preparing the starter: Mix the warm milk with the sugar and dried yeast. Let stand for about 10 minutes in a warm place until the starter begins to work.
  • Preparing the dough: Put the flour, egg, egg yolk and salt into a bowl. Add the starter and the oil. Mix into a smooth, non-sticky dough. Cover it and leave to rise in a warm place until it increases in volume.
  • Preparing the poppy seed filling: Mix the ground poppy seeds with the sugar, vanilla sugar and semolina. Pour over with hot milk and mix well.
  • Preparing the nut filling: Mix the raisins with the rum and lemon juice and let stand for about 30 minutes. Mix the ground nuts with the sugar, add the raisins with their liquid, and pour in hot milk. Mix until smooth.
  • Shaping the strudels: Punch down the risen dough once more and divide it into two halves. Roll one half out thinly and spread the poppy seed filling evenly. Roll up tightly and transfer to a baking sheet lined with parchment paper. Prick with a fork and brush with the beaten egg. Repeat the same procedure with the second half of the dough, which you fill with the nut filling.
  • Baking: Bake the strudels in a preheated oven at 180°C for about 30-35 minutes, until they acquire a beautiful golden color.
  • Cooling and serving: Let the strudels cool and then cut them into portions.
