- 1. Preparing the dough: Sift the flour onto the work surface and mix it with the powdered sugar. Add the lard and work into a smooth dough.
- 2. Dividing and resting the dough: Divide the dough into two portions. Work Dutch cocoa into one portion. Wrap both doughs in a bag and let rest in the refrigerator for at least 2 hours, ideally overnight.
- 3. Shaping the cookies: From the rested dough, form small balls and place them on a baking sheet lined with parchment paper. Slightly flatten each ball and create a depression in the center, preferably with the back of a wooden spoon.
- 4. Filling with jam: Fill the depressions with your favorite jam.
- 5. Baking: Place the sheet in an oven preheated to 150–160 °C and bake for about 25 minutes, or until the cookies turn golden. Baking time may vary depending on the oven.
- 6. Finishing: Remove the cookies from the oven after baking and let them cool. You can serve them as is, or dust them with powdered sugar.
