- Preheat the oven to 180 °C.
- Drain the syrup from the compote and let the cherries drain. If using fresh cherries, pit them.
- In a larger bowl, beat the eggs with the sugar until pale and frothy.
- Add the oil, yogurt and lemon zest, mix everything thoroughly.
- Sift the flour with the baking powder into the mixture and add the vanilla sugars. Mix until a smooth batter forms.
- Grease the baking tray (approx. 30 × 20 cm) with butter and dust with flour or coconut.
- Pour the batter onto the tray and spread it evenly.
- Arrange the cherries on the batter.
- Bake the cake in the preheated oven for about 35 minutes, until the surface turns golden.
- After cooling, sprinkle with powdered sugar and serve.
