If you’re looking for a simple dessert recipe you can make in no time, this yogurt cake is an ideal choice. To measure the ingredients, a regular cup with a capacity of 2 dl will suffice. The combination of yogurt, cherries and lemon zest creates a perfect flavor harmony.

  • Preheat the oven to 180 °C.
  • Drain the syrup from the compote and let the cherries drain. If using fresh cherries, pit them.
  • In a larger bowl, beat the eggs with the sugar until pale and frothy.
  • Add the oil, yogurt and lemon zest, mix everything thoroughly.
  • Sift the flour with the baking powder into the mixture and add the vanilla sugars. Mix until a smooth batter forms.
  • Grease the baking tray (approx. 30 × 20 cm) with butter and dust with flour or coconut.
  • Pour the batter onto the tray and spread it evenly.
  • Arrange the cherries on the batter.
  • Bake the cake in the preheated oven for about 35 minutes, until the surface turns golden.
  • After cooling, sprinkle with powdered sugar and serve.
