The aroma of roast pork shoulder can fill any home with a feeling of coziness and comfort. This recipe, which you can also prepare with lamb or veal, will delight you with its simplicity and resulting flavor. Complemented with sauerkraut or sautéed mushrooms, it creates the perfect Sunday lunch.

Preparation procedure

  • Preparing the meat: Salt the pork shoulder, cover with foil and let it rest for 30 minutes. Peel the onion and garlic. Slice the onion into approximately 1 cm thick rounds, roughly chop the garlic. Peel the apple and slice it.
  • Preparing the roasting pan: Pour a little olive oil into the roasting pan and spread the onion, garlic and apples. Season with black pepper and add the sprigs of rosemary and thyme. Place the salted shoulder on top and drizzle it with oil. Finally add the hot chicken stock.
  • Roasting: Place the roasting pan in a preheated oven at 200 °C and roast for 30 minutes. Then reduce the temperature to 180 °C and continue roasting for another 60 minutes. During the last 30 minutes baste the meat with the drippings every 10 minutes.
  • Finishing: After roasting, remove the meat from the roasting pan, cover with foil and let rest for 10 minutes. Strain the drippings from the roasting pan. Pass the apples and onions through a sieve and remove excess fat. Mix the starch powder in water, add it to the drippings and, stirring constantly, simmer for 2–3 minutes until the sauce thickens.
  • Serving: Slice the meat, pour over the sauce and serve. It goes great with sauerkraut or sautéed mushrooms.
