- Peel, wash the carrots, and if they are thick you can cut them in half or into quarters.
- Mix the oil with salt, pepper and the crushed garlic. Toss the carrots well with the seasoned oil and transfer them to a baking tray lined with baking paper.
- Cover with foil and place in a preheated oven, where bake for about 45 minutes at 200 degrees.
- I recommend stirring occasionally and about 10 minutes before it's done, remove the foil and let it crisp up.
- If necessary, baste with a little water, or brush with a bit more olive oil.
- Sprinkle with parsley and enjoy.
