  • Preheating the oven and onion base Preheat the oven to 200 °C (top/bottom heat). Heat a little oil in a pan (about 2 tablespoons) and sauté the onions over medium heat until golden.
  • Sauté the onion Heat 30 ml of olive oil in a pan. Over medium heat sauté the onion quarters until golden and let them lightly caramelize. Transfer to a large baking dish.
  • Prepare the meat and seasoning To the onions in the baking dish add the chicken thighs, unpeeled garlic cloves, coriander, lime juice, the remaining oil, pepper and salt. Mix everything well so the ingredients are coated with oil and seasoning. Place the thighs skin-side up.
