Thanks to slow roasting and proper storage it will last in the pantry for months. It contains no preservatives, colorings or excess fat — just pure ingredients and an honest method.

Ingredients

1 packet Italian herb mix (or homemade: basil, oregano, marjoram)

Preparation procedure

  • Preparation of ingredients Wash the tomatoes and cut into pieces. Peel the onions and chop coarsely. Separate the garlic into cloves, you don't need to chop — it will soften during roasting.
  • Seasoning and roasting Pour the oil into a deep baking tray, add the vegetables and sprinkle with salt, sugar, pepper and herbs. Roast in a preheated oven at 200 °C for about 2 hours. Stir after one hour.
  • Blending and cooking After baking, blend the mixture with an immersion blender. Let it simmer for a few minutes and adjust seasoning as needed (salt, sugar, herbs).
  • Canning without chemicals Fill the finished sauce into hot sterilized jars. Close them, turn upside down and wrap in a blanket (so-called dunszt). Let cool for 24–48 hours.
