Rosehips are among the traditional fruits of Czech nature and are literally packed with vitamin C and other beneficial substances. Homemade rosehip jam is not only tasty but also healthy and, thanks to its natural sweet-and-sour taste, goes well with baked goods, in desserts, or simply by the spoonful. This recipe is simple and anyone who wants to enjoy an honest homemade treat can manage it.

Preparation procedure

  • Preparing the rosehips: Thoroughly wash the fruits, remove the stalks and any remaining flower styles. Cut them in half.
  • Pre-cooking: Place the rosehips in a large pot, cover with water and cook for about 2 hours, until the seeds and skins begin to loosen. During boiling you can crush the fruits with a potato masher. Then let it sit for at least 2–3 hours, ideally overnight.
  • Straining: Strain the cooked mixture through a fine sieve. If it's too thick, thin it with a little water. Only hard residues and hairs should remain in the sieve.
  • Final cooking: Return the strained rosehip pulp to the pot and cook for another 2–3 hours, until the volume is reduced by about half and the mixture thickens. Then add sugar to taste and stir more often so the jam doesn't burn.
  • Canning: Pour the finished jam into clean jars rinsed with hot water and close them tightly immediately. Turn the jars upside down or cover them with a blanket and let them cool.
  • Storage: Store the jam in a cool, dry place. Thanks to the sugar, it will keep for a very long time even without preservatives.
