This excellent beetroot and potato salad is light, tasty and full of healthy ingredients. Its combination with pickled cucumbers and sour cream gives the salad a fresh and delicate flavor. It is ideal as a side to a main course or as a light standalone dish.

Preparation procedure
- Preparation of the beetroot and potatoes: Place the cleaned beetroot into a pot, cover with water and cook for about 1 hour and 15 minutes, until tender. Then let it cool and peel it. Thoroughly wash the potatoes and cook them in their skins until soft. Once cooled, peel them and let them cool completely.
- Preparation of the salad: Cut the potatoes and beetroot into cubes. Finely dice the onion and pickled cucumbers. Place all ingredients into a bowl, add the sour cream and finely chopped parsley. Pour in the oil, mix well and season with salt, pepper, vinegar and sugar to taste.
- Tip: If you want a richer version of the salad, you can replace the sour cream with mayonnaise. Serve the salad with fresh bread as a standalone dish, or as a side to a main course, for example with roast pork, chicken or fish.
