  • Preparing the batter In a large bowl, whisk the eggs until frothy. Add the condensed milk and gradually fold in the sifted flour mixed with salt, baking powder and cocoa. You will get a thick, yet still pourable batter.
  • Baking the base Line a pan of about 20×20 cm with baking paper. Pour the batter into it and bake in a preheated oven at 175–180 °C (fan 160 °C) for approximately 10 minutes – the base should remain slightly springy.
  • Preparing the cream While the base cools, whip the cream until stiff and gently combine it with the quark. The cream can be sweetened to taste with a tablespoon of powdered sugar.
  • Assembling the dessert Cut the cooled base horizontally into two equal layers. Spread the quark-and-cream mixture on the bottom layer, place the top layer over it and press lightly.
  • Chocolate glaze Chop the chocolate, place it in a bowl with the cream and, stirring occasionally, melt it in a double boiler or in the microwave on low power. Pour the glaze over the top of the dessert.
  • Chilling and cutting Let it set in the refrigerator for at least 30 minutes. Then cut the tray into 10–12 squares and serve chilled.
