  • Preparing the salmon Pat the salmon fillets dry with a paper towel, season with salt and pepper on both sides.
  • Frying Heat the oil and butter in a pan. Place the salmon skin-side down and fry for 3 minutes, then flip and fry another 3 minutes until golden. Remove the fish and set aside.
  • Garlic and vegetables In the pan drippings, sauté the crushed garlic for 30 s, add the halved cherry tomatoes, spinach and chopped basil. Sauté for 1–2 minutes, until the spinach wilts.
  • Creamy sauce Pour in the cooking cream, add the chopped parsley and simmer briefly so the sauce thickens slightly. Stir in the Parmesan and mix until smooth.
