This amazing dessert has been popular for more than 30 years and no one can ever get enough of it! Scottish cream, as it is called, is known for its lightness and delicate flavor. In the past the recipe was very simple and economical, but even today it retains its charm and deliciousness.

Preparation procedure

  • 1. Dough preparation: Using plain flour, baking powder, butter, milk, sugar and a pinch of salt, work a smooth dough. Divide the dough into 4 parts.
  • 2. Baking the sheets: Roll each portion out to the size of a large baking tray. Bake each piece for 5 minutes at 170 °C. After baking, carefully transfer the sheets to the work surface to cool.
  • 3. Preparing the cream: Gradually add the sugar, milk and flour to the egg yolks. Stir the mixture over the heat until it thickens (1-2 minutes). Then remove from the heat.
  • 4. Whipping the egg whites: Whip the egg whites to stiff peaks and gently fold them into the warm cream.
  • 5. Assembling the dessert: Gradually layer the warm cream onto the cooled sheets.
  • 6. Preparing the topping: Melt the chocolate over a double boiler together with the butter. Spread it evenly over the top sheet.
  • 7. Chilling: Let the dessert chill in the fridge, preferably overnight.
