These savory snail rolls are the perfect recipe for any occasion – whether as a treat for guests, a quick dinner or a picnic snack. Thanks to the delicate potato purée and buttery filling they are incredibly moist and tasty.

Preparation procedure

  • Preparing the dough: Pour the warm milk and water into a bowl, add the yeast and sugar. Mix well and let stand for 10 minutes to activate the yeast. Add the oil and egg white, stir. Gradually add the flour with the salt and work into a soft, elastic dough. Cover with a towel and let rise for about 1 hour in a warm place.
  • Filling: Mash the cooked potatoes into a smooth purée. Add the butter, milk, salt and finally the chopped parsley. Mix the mixture thoroughly until smooth.
  • Shaping the snails: Divide the risen dough into three parts. Roll each into a rectangle, spread with the potato mixture and roll up like a roulade. Cut into slices about 3–4 cm thick and place them on a baking sheet lined with parchment paper.
  • Baking: Brush the snails with the beaten egg yolk with milk and bake in an oven preheated to 180 °C for approximately 20–25 minutes, until golden.
