- Only at that moment does the mascarpone come into play. Gently fold it into the cream. At this point you should feel the cream beginning to thicken slightly, but it's still not quite there. So take a regular hand mixer and gradually whip until everything has the consistency of a perfectly thick cream.
- Since the cream may have warmed up a bit during preparation, it's appropriate to return it to the proper temperature. Do this by placing it in the refrigerator, where you let it set. Ideally set the fridge as low as possible. This way the desired temperature will be reached sooner.
