  • Heat the milk – In a pot heat the milk for 15 minutes until it reaches a temperature of around 85°C, but it must not boil.
  • Add yogurt and lemon – To the heated milk add the yogurt and the juice of half a lemon. Stir slowly and let the mixture rest for 3 hours.
  • Draining the whey – After 3 hours strain the mixture through a cotton cloth and a sieve into a second pot. Let it drain so the whey separates from the cheese.
  • Chilling – Place the cheese with the cloth in the refrigerator for 30 minutes to achieve the desired texture.
  • Seasoning – After taking it out of the fridge season the cheese with salt, spices, or flavoring to your taste.
  • Shaping – Place the cheese into a mold and let it rest in the refrigerator for another 8 hours.
  • Consumption – After 8 hours the cheese is ready to serve.
