Preparation procedure

  • Melt the butter before preparing, but it must be cooled when you work with it; the milk must also be well chilled.
  • It's good if the yolks are at room temperature and, conversely, the egg whites are chilled.
  • Beat the yolks together with the sugar until foamy. The mixture should double in volume.
  • Gradually add the melted butter, milk and vanilla flavoring.
  • While continuously whisking, fold the flour into the mixture. Whip the egg whites and salt into stiff peaks and gradually fold them by hand into the yolk mixture.
  • The batter has a liquid consistency. Now just pour it onto a baking sheet that you've previously greased and dusted with flour.
  • Place the batter into a preheated oven at 175 °C and bake for about 40 minutes.
  • The pastry is ready when the top is golden (cracks may also appear).
  • Don't worry if the center seems liquid; the pastry will thicken as it cools and will be exactly as it should be.
  • When the pastry has cooled, place it in the refrigerator and serve it well chilled.
