Quark pouches are an ideal dessert for any occasion. This recipe is simple and the result is not only beautiful but also very tasty. The soft, easily shapeable dough is filled with a rich quark filling that becomes wonderfully juicy when baked.

Preparation procedure

  • Dough preparation: From the lukewarm milk, yeast and sugar prepare the yeast starter. In a bowl, mix the remaining ingredients for the dough – flour, butter, sugar, eggs, vanilla sugar, salt and lemon zest. Add the prepared starter and mix thoroughly. Knead the dough until it is soft and smooth. If the dough is too stiff, add a little milk. Cover the finished dough and let it rise in a warm place.
  • Filling preparation: Beat the egg whites into stiff peaks. Mix the quark with the yolks, sugar, vanilla sugar, semolina and lemon zest. Finally, gently fold in the beaten egg whites. If you like, add raisins to the filling to taste.
  • Shaping and baking the pouches: Roll out the risen dough into a sheet about 3 mm thick. Cut into squares approximately 8 cm in size. Place a large spoonful of the quark filling in the center of each square. Gather all four corners of the dough together and form a pouch shape. Brush the surface of the pouches with the beaten egg. Place the pouches on a baking tray lined with parchment paper and bake in a preheated oven at 180 °C for about 20–25 minutes, until beautifully golden.

Final tip: Quark pouches are ideal with afternoon coffee or tea. If you want to improve the recipe, you can add nuts or cinnamon to the filling for extra flavor. Enjoy this traditional recipe that never gets old!
