Preparation procedure

  • First, heat water for the spaghetti in a pot.
  • Meanwhile, prepare the ingredients.
  • Crack the eggs and separate the yolks from the whites.
  • Grate the Parmesan finely. Don't be stingy with this fragrant cheese; I used almost all of it.
  • Put the grated cheese into a larger bowl.
  • First, cut the bacon into smaller pieces.
  • Then fry it in a pan.
  • Pour the cream into the pan with the bacon and let it warm over low heat. The cream must not boil.
  • Add 4 yolks to the Parmesan and mix into a paste. If the paste is too thick, you can add another yolk.
  • Then add a few tablespoons of the pasta water.
  • Stir until a thinner mixture forms.
  • Season it with salt and pepper.
  • While stirring constantly, pour this mixture into the cream with the bacon and let it all warm through.
  • Put the cooked spaghetti into a large bowl and pour the sauce over them.
  • Stir and serve.
  • You can grate more Parmesan on top and garnish with parsley or basil.
