For the brine (for 1 l of water):
- 2 tablespoons vinegar
- 2 tablespoons cane sugar
- 2 tablespoons salt
- 1 tablespoon oil
- 2-3 bay leaves
- 1-2 cloves
- 6-7 peppercorns
- Wash the tomatoes and slice them into rounds; do the same with the onion and garlic.
- Layer the vegetables into the jars – a layer of tomatoes, a few pieces of garlic and a layer of onion.
- Continue like this until you fill the jars about 1 cm from the top edge.
- Pour water into a pot and put it on the heat.
- When the water boils, add the remaining ingredients and when the sugar dissolves, pour the hot liquid over the vegetables so that it covers them. Close the jars and sterilize for 10 minutes – that's enough just for the lids to seal.
- Remove from the water, turn them upside down and let cool completely.
- The next day you can enjoy them.
