Preparation procedure
- Gnocchi preparation: Peel the potatoes, cut them into cubes and boil in salted water until tender (about 15 minutes). Then drain and mash them into a smooth puree. Let cool. Let the frozen spinach thaw and squeeze out the excess water thoroughly. Add the spinach and the eggs (beaten beforehand) to the cooled potatoes. Gradually add the flour or semolina and work the dough. On a floured work surface, roll the dough into a long log and cut into pieces about 2 cm in size. These pieces will form the gnocchi. Place the gnocchi into boiling salted water and cook until they float to the surface (about 3–5 minutes). Then remove them and set aside.
- Sauce preparation: Cut the chicken breasts into smaller cubes, season with salt and pepper. Melt the butter in a pan and fry the chicken cubes on both sides until golden. Fry only briefly so the meat stays juicy. Add the whipping cream and the pressed garlic, stirring over low heat. Mix the sour cream with the flour and add this mixture to the sauce to thicken it. Let simmer until the meat is tender. If needed, season with salt and pepper.
- Serving: Serve the finished gnocchi with the chicken and creamy sauce.
