Preparation procedure

Dough preparation: Preheat the oven to 175 °C and line a 20 × 30 cm baking tray with parchment paper. In a bowl, mix the sifted flour, baking soda, cocoa, sugar and a pinch of salt. Add the softened butter and milk. Work into a smooth dough, then divide it into 5 equal parts.
Baking the sheets: Roll each piece of dough on a floured surface into a thin sheet (about 3 mm). Bake the sheets in the preheated oven for 12–14 minutes. Let them cool completely.
Preparing the cream: In a smaller bowl, mix the flour, starch, sugar, vanilla sugar, egg yolk and a little cold milk. Bring the remaining milk to a boil and then pour the mixture into it. Cook, stirring constantly, until the mixture thickens. Remove from heat and let cool completely.
Finishing the cream: Beat the butter with the powdered sugar until light and fluffy. Gradually add the cooled pudding and rum essence. Divide the cream into four portions.
Assembling the pastry: Spread one portion of the cream on the first sheet of dough, cover with another sheet and repeat until all layers are used. Leave the top sheet without cream.
Pressing and resting: Lightly weigh the pastry down, for example with a second baking sheet, and let it rest in the refrigerator for at least 12 hours.
Serving: Before serving, dust with powdered sugar and cut into slices.
