Quick, juicy, impressive. These bacon-wrapped chicken rolls have a fragrant mushroom mixture, herbs and cheese inside, crispy bacon on the outside and a fresh salad with an herb dip. An ideal choice for a family dinner or entertaining friends – they look great on the table and taste even better.

Preparation procedure

  • Filling for the rolls: Heat the oil with the butter in a pan, add the finely chopped onion and cook until translucent. Stir in the chopped garlic, briefly sauté. Add the sliced mushrooms, season with salt and pepper and simmer until tender, until the liquid has reduced. Remove from the heat, stir in the chopped parsley and let cool.
  • Rolling: Cut the chicken breasts lengthwise into slices, gently pound, season with salt and pepper and sprinkle with sweet paprika. Place a teaspoon of the mushroom mixture and some grated cheese on each slice, roll tightly and wrap with a slice of bacon. Secure with a toothpick if necessary. Arrange the rolls in a lightly greased baking dish.
  • Baking: Bake in an oven preheated to 180 °C for about 35–40 minutes. For the last 5 minutes you can turn on the grill for extra crispy bacon. Once during cooking, baste with the drippings.
  • Salad: Dice the cucumber and red bell pepper, halve the tomatoes, finely chop the onion. Add chopped chives and dill, stir in the cream cheese, season with salt and pepper. Mix and let rest briefly.
  • Dip: Mix the sour cream with soy sauce, crushed garlic and dill, season with salt and pepper to taste. Serve chilled.
  • Serving: Serve the rolls hot with the salad and a spoonful of dip. They are also great with roasted potatoes or fresh bread.
