Preparation procedure

  • Base of the meat mixture In a bowl, beat the eggs with salt and pepper. Add the ground meat, garlic, red onion, parsley and breadcrumbs. Mix.
  • Sautéing the vegetables In a pan, sauté the white onion until golden. Add the carrot, sauté briefly and then add the cabbage. Salt, pepper, add the herbs and pour in the hot water. Simmer for 7–8 minutes, then let cool.
  • Combining the mixture Fold the vegetables into the meat mixture and work thoroughly with your hands so that everything is evenly combined.
  • Rice-cheese center Let the cooked rice cool. Shape a small patty from the rice, place a cube of cheese in the center and cover it with more rice to form a ball.
  • Shaping the balls Spread a portion of the meat mixture on plastic wrap, place the rice ball in the middle and carefully enclose the meat around it. Form a large meatball.
  • Preparing the sauce Mix the tomato sauce, mustard, yogurt, salt, oregano and dried garlic. Place the meatballs into a baking dish and coat them with the sauce on all sides.
  • Baking Bake in a preheated oven at 180 °C for about 40 minutes.
  • Browning the cheese Remove the dish from the oven, sprinkle the balls with grated mozzarella and return to the oven for another 10 minutes, until the cheese melts and turns slightly golden.
  • Salad Mix the tomatoes, cucumber, parsley, spring onion and beans. Stir the yogurt with mustard and lemon juice and season the salad.
