This excellent cake is a great alternative to traditional desserts and is popular not only with children but also with adults. Free of white sugar and with plenty of healthy ingredients, it’s ideal as a snack or dessert.

Preparation procedure
- Preparing the nuts and ingredients: Chop the nuts into smaller pieces and you can toast them in a dry pan. Peel the apples and carrots and grate them on a coarse grater. Mix the raisins and cranberries. Grind the nuts in a blender.
- Preparing the batter: In one bowl, mix all the dry ingredients: spelt flour, baking powder, cinnamon, baking soda and salt. Add the brown sugar, nuts, raisins and cranberries. Add the grated apples, carrots and eggs. Mix everything thoroughly with a spoon.
- Baking: Line a baking tray (25 x 35 cm) with baking paper and spread the batter evenly on it. Smooth it out. Preheat the oven to 180 °C and bake for about 40 minutes. After baking, let the cake cool.
- Preparing the topping: Melt the chocolate in a water bath and add the oil. Stir well.
- Finishing: Once cooled, cut the cake into cubes. Put a small teaspoon of chocolate topping on each cube and decorate with dried fruit or nuts.
