Preparation procedure

  • Preparing the cake base Preheat the oven to 180 °C. Line a 20-21 cm cake pan with parchment paper (do not grease the sides). Mix the ground almonds, cocoa powder, cornstarch and a pinch of salt. Whisk the egg whites into stiff peaks. Add a few drops of lemon juice and gradually beat in the sugar until the meringue is firm and glossy. Carefully fold in the dry ingredients. Pour the batter into the prepared pan, smooth the top and bake for 25-30 minutes. Do not open the oven during the first 20 minutes. After baking, let the cake base cool completely.
  • Preparing the cream Beat the egg yolks with the sugar until light and frothy. In a saucepan, mix the cornstarch with the cream and, stirring constantly, bring to a boil. Stir one-third of the butter into the hot mixture, then whisk in the sweetened yolks and warm gently again (do not boil to avoid curdling the yolks). Finally add the remaining butter and let cool. Place the cream in the freezer for 20-30 minutes to reach the right consistency.
  • Assembling the cake Remove the cake base from the pan and level the top. Turn it upside down and slice it horizontally. Spread part of the cream on the bottom layer, top with the other layer of the base and cover with the remaining cream, including the sides. Evenly scatter the toasted almond flakes over the cake. Place the cake in the freezer for an hour — this will give it a perfect consistency.
