Light, fluffy slices of puff pastry layered with dense cherry pudding and hearty whipped cream. A simple yet impressive dessert without gelatin that holds its shape well and cuts into neat squares.

Preparation procedure

  • Sheets of puff pastry Roll each sheet of pastry to the size of an inverted baking tray, prick several times with a fork and bake individually at 200 °C for 10–12 minutes until golden. Let cool completely. (For slices, three equally sized sheets work best.)
  • Cherry pudding In part of the cold cherry juice, mix the pudding powders and sugar. Bring the remaining juice to a boil, pour in the mixed pudding and, stirring constantly, cook until thickened for 1–2 minutes. Stir in the drained cherries and let cool to lukewarm (you can cover with cling film to prevent a skin forming).
  • Whipped cream Whip the cream to stiff peaks, briefly beat in the powdered sugar at the end. Keep chilled.
  • Layering Place the first sheet of puff pastry on the work surface, spread half of the cherry pudding on it, and evenly spread half of the whipped cream over that. Top with the second sheet and repeat the process (pudding, whipped cream). Cover with the third sheet.
  • Chilling and cutting Lightly weigh down the surface with a board, wrap or cover the dessert and chill for at least 2–3 hours, ideally overnight. Before serving, dust with powdered sugar and cut into squares with a sharp knife.

Tips and variations

  • If you want a more pronounced fruit flavor, add a tablespoon of cherry jam to the pudding.

  • For a firmer whipped cream you can use a stabilizer, or substitute part of the cream with mascarpone (250 g per 500 ml cream).

  • You can use cherries instead of sour cherries; the dessert will be sweeter and less tart.
