These buttery crescent rolls with quark and fruit jam are ideal for afternoon coffee and family celebrations. The tender quark dough with cold butter is quick to prepare and a layer of sweet jam is pressed into it – the result is deliciously moist and delicate.

Preparation procedure

  • Dough preparation (15 min): Sift the flour with the baking powder into a bowl. Cut the butter into pieces and grate it into the flour using a grater until crumbly pieces form. Add the quark, vanilla sugar, a pinch of salt and the egg. Quickly work into a smooth, non-yeasted dough.
  • Chilling (min. 60 min): Divide the dough into 2 portions (or more smaller ones if you want a triple batch), wrap in cling film and place in the refrigerator for at least 1 hour (up to 2 days).
  • Shaping (15 min): Roll each portion into a thin sheet (2–3 mm) and cut out a round shape. Cut into 12–16 triangles (24 rolls in total). Spread a thin layer of jam on the wider part of each triangle and roll toward the tip. Place the rolls seam-side down on a baking sheet lined with parchment paper.
  • Baking (17–20 min): Preheat the oven to 200 °C and bake until golden, until the rolls firm up and the edges are lightly browned.
  • Finishing (5 min): Let cool completely and dust with powdered sugar.
