- Preparation of the fat: Melt the fat in the microwave or in a water bath and let it cool.
- Beating the yolks: In a bowl, beat the yolks with powdered sugar and vanilla sugar until the mixture is fluffy and pale. Add the cooled fat and beat thoroughly.
- Adding the milk: Add the milk to the mixture and stir again so that all ingredients combine well.
- Adding the flour: Gradually add the flour, stirring constantly.
- Preparing the egg whites: In a separate bowl, whip the egg whites into stiff peaks. Shortly before the end of whipping, mix in the lemon juice.
- Combining the mixtures: Carefully fold the egg white foam into the batter so the mixture retains a fluffy consistency.
- Baking: Spread the batter onto a baking tray with higher edges (17 × 27 cm) and place it in an oven preheated to 160 °C. Bake for about 45 minutes, monitoring the cake — it's ready when the top begins to crack.
- Cooling: Let it cool and then put it into the refrigerator to firm up.
