Homemade yeasted braids are the kind of pastry that will fill the whole kitchen with aroma and disappear from the tray before they cool. A delicate, tender crumb and golden crust brushed with sweetened condensed milk create a flavor that recalls childhood Sundays at Grandma’s. If you follow a few simple steps, the dough will succeed even for beginners.

Preparation procedure

  • Yeast activation Stir the yeast and sugar into the warm milk. Let sit for 10–15 minutes until a foam forms on the surface. The yeast will awaken and the dough will then rise easily.
  • Preparing the dough Add the eggs, vanilla sugar and salt to the mixture. Gradually add the sifted flour and work into a soft, slightly sticky dough. Finally work in the softened butter until fully incorporated. Cover the bowl with a towel or cling film and let rise in a warm place for 1 hour.
  • Shaping the braids Divide the risen dough into 9 equal portions (approx. 105 g). Roll each into a log and braid three together into a classic braid. Press the ends firmly to hold the shape. Place the braids on a baking sheet lined with parchment paper, cover and let rest for another 15 minutes.
  • Baking Brush with the beaten egg. Bake in a preheated oven at 180 °C for about 25 minutes, until golden.
  • Finishing Immediately brush the hot braids with sweetened condensed milk. It will be absorbed into the crust and the pastry will become even softer and more fragrant.

Tips and recommendations

  • If the eggs are straight from the fridge, let them warm to room temperature for 5–10 minutes — the dough will then rise better.

  • Do not add extra flour to the dough, the braids would become tough.

  • In summer the dough rises faster, in winter it may need more time.
