Ingredients: 6 egg yolks; 250 g butter; 150 g powdered sugar; 300 g Greek yogurt; 350 g all-purpose flour; 10 g baking powder; 1/4 teaspoon baking soda; 2 teaspoons vanilla extract; 1 teaspoon salt; 1500 g grated apples; 1 packet vanilla sugar; granulated sugar to taste; 50 g butter; 1 tablespoon cornstarch; 2 teaspoons cinnamon; 6 egg whites; 125 g powdered sugar; 2 packets vanilla sugar; juice of half a lemon; a pinch of salt

Preparation procedure

Preparation of the apple filling: Peel the apples and coarsely grate them. Put them into a pot, add the sugar, butter and cinnamon. Simmer over low heat until they release their juices. Strain off the juice and let it cool. Stir the cornstarch into the juice, return it to the apples and, stirring constantly, form a thick mixture.
Preparation of the dough: Beat the butter with the salt and sugar until frothy. Add the egg yolks and vanilla extract. Then mix in the yogurt, baking powder and baking soda. Finally gradually incorporate the flour until a firm dough is formed. Spread the dough with your fingers over the bottom of a buttered baking tray about 23 x 40 cm in size. Pre-bake in a preheated oven at 180 °C for about 25 minutes.
Layering the cake: Spread the warm apple filling evenly over the pre-baked dough and return to the oven for another 10 minutes.
Preparation of the meringue: Whisk the egg whites with a pinch of salt until foamy, gradually add the powdered sugar, vanilla sugar and lemon juice. Beat until stiff peaks form.
Finishing: Spread the egg white meringue over the apple layer. You can decorate the surface with patterns using a fork. Return the cake to the oven and bake for another 10 minutes. After baking, let the cake cool completely and then cut into portions.
