If you love coconut and don’t want to bother with baking, this recipe for homemade coconut Bounty cubes is just for you! Make them at home and save money on store-bought bars. Served chilled, for example with iced coffee, they are a perfect treat for your taste buds.

Preparation procedure

  • Preparing the dough: Bring the water and sugar to a boil until the mixture reaches a thread consistency (when you lift the spoon, the sugar mixture forms faint threads). Add the ground biscuits, cocoa and apricot jam to this sugar mixture. Mix everything well. Divide the dough into three parts.
  • Preparing the cream: Beat the butter and sugar until smooth. Finally add the grated coconut and mix.
  • Assembly: Line a baking tray with parchment paper and place the first layer of dough on the bottom. Spread half of the cream over this layer and smooth it. Cover with the second layer of dough and spread the remaining cream. Finally add the last layer of dough.
  • Topping: Melt the cooking chocolate in a water bath and pour it evenly over the top of the dessert.
  • Finishing: Chill in the refrigerator for at least 2 hours so the dessert firms up and the flavors meld.
