This marinade turns ordinary ribs into the star of the table. The sweet-and-sour balance of apple, ketchup and spices gives the meat juiciness, tenderness and a beautifully caramelized crust. Preparation procedure

  • Marinade (5 min) Blend the apple and immediately mix it with the lemon juice. Add ketchup, soy sauce, garlic, paprika, cinnamon, pepper, salt and sugar (or honey). Mix thoroughly.
  • Marinating (2 hours to overnight) Dry the ribs, coat them with the marinade on all sides and place in a sealable bag/bowl. Leave for at least 2 hours, ideally overnight in the fridge. Tip: Set aside some of the clean marinade in advance for basting during baking.
  • Oven baking (1.5–2 h) Preheat the oven to 180 °C. Place the ribs in a roasting pan, add 100–150 ml of water, loosely cover with foil and bake for 60–75 minutes. Then remove the foil, baste the ribs with the marinade 2–3 times while baking and finish baking for 30–45 minutes until tender and golden.
  • Searing/finishing and serving For an extra crust, put under the grill for 3–5 minutes at the end (watch out for sugar burning). Let rest for 5–10 minutes and separate portions with a sharp knife between the bones.

Safety note: Use marinade that has come into contact with raw meat only for baking/cooking. For the final basting use the reserved “clean” portion, or briefly boil it beforehand (min. 5 minutes).
