  • Preparation of mushrooms: Soak the dried porcini mushrooms in water for several hours, then drain the water and pour in fresh clean water.
  • Preparation of the base: Sauté finely chopped onion in butter until softened. Once it is soft, add the soaked mushrooms, salt, bay leaves, whole peppercorns, and bouillon. Cook for about 30 minutes.
  • Preparation of the potatoes: While the mushrooms are cooking, peel and dice the potatoes into small cubes.
  • Cooking the soup: After 25 minutes, add the potatoes to the soup and cook them until tender. Meanwhile, mix the sour cream and heavy cream with a little flour to form a smooth mixture.
  • Finishing the soup: Once the potatoes are soft, add the cream mixture while stirring constantly and cook for another 10 minutes. Finally, season with sugar and vinegar to taste.
